This 300 bottle limited-production 2020 Negramoll comes from the La Cruz de Fray Diego vineyard in Tacoronte. Fermentation takes place in open barrels using whole-cluster, foot-trodden grapes. The wine is then transferred to a clay amphora before being aged in 225-litre oak barrels for 8 months. After that, it spends an additional 3 years ageing in the bottle before release, resulting in a wine of depth, elegance, and unique character.
